Eating with the Seasons: Summer

A healthy summertime dessert for supporting heart and small intestine energy this summer. Red is the color of summer in Traditional Chinese Medicine. We encourage eating all the red vegetables and fruit this season to balance the energies of the heart and small intestine. Grilled Summer Peaches with Coconut Cardamom Whipped Cream

Ingredients:

  • Seasonal organic peaches
    + 1 tbs coconut oil for the grill + 1 can coconut cream, chilled
    + 1 tsp cardamom
    + 1 tsp good vanilla extract
    + 1 tbs local honey or maple syrup

How to Make It:

Heat up your grill to medium heat or use a griddle if working on a stovetop. Slice peaches in half, remove the pits and lay on the grill cut-side down, for 3 min or so, depending on size of peaches. Add the coconut cream into a large bowl and whisk well until soft peaks form, about 2 to 4 minutes. (you could use a hand mixer for this). Whisk in vanilla and cardamom; keep coconut cream in the fridge until ready to eat. Serve hot, topped with a dollop of cream. Drizzle with honey or syrup and a pinch of sea salt.
